The “Due Torri” produced by Alcisa is the queen of mortadella and is distinguished by the high quality of the pork cuts used (shoulder and loin) and the greater leanness due to the smaller quantity of lard; it is produced with the most modern technologies but in full respect of traditions.
The modern version of the product is a very fine mixture of lean pork and fine lardons of throat or cheek incorporated as cubes, mixed, stuffed into suitable casings, flavored with salt, black pepper and spices according to the ancient and original Bolognese recipe.
