Garofalo creates fresh pasta that is smooth on the outside and rough in the curled part, to retain the sauce and conquer with an explosion of flavor with each bite.
Trofie are one of the gastronomic specialties of Recco, but there are several legends about their origin.
There are those who claim that they were born on ships, at the time of the Crusades, when the cooks, in an attempt to clean the dough from their fingers,
they created this particular format. Others say that the name derives from the dialect term strufuggiâ, that is to rub, to indicate the way in which the pasta is worked.
