RED WINE TO DRINK COLD
The name of our wine, unique in its kind as a red “to drink cold”, is closely linked to the territory where it is born, Salento, called in antiquity “The garden of Italy” for the richness and variety of its fruits. In fact, this wine owes its name to one of the most delicious fruits that are born in this area: the fig in the variety that is characterized by its purplish red color so intense that it approaches black (“moro” in dialect).
Tasting notes
Fichimori has a ruby red color with a slight purplish hue. The nose prevails
notes of red fruit, strawberry and raspberry, followed by delicate sensations of dog rose. On the palate it is fresh,
sapid and flowing, characterized by a soft entry and a fruity aftertaste.
Vinification and aging
Upon arrival in the cellar, the grapes were de-stemmed and gently pressed.
The cold pre-fermentation maceration, which took place while maintaining the
temperature of 5 ° C, lasted for 5 days in order to extract the varietal aromas, the color and the softer polyphenolic components; this was followed by racking and fermentation without skins at 18 ° C. After a few months of storage in stainless steel tanks, the wine was bottled and then placed on the market.
COLOR: Purple red with violet reflections.
BOUQUET: Fruity notes of cherry, strawberry, currant and pomegranate.
TASTE: Modern and dynamic interpretation of Negroamaro, striking for its pleasantness, drinkability and flavor.
