The Gorgonzola Malghesi D.O.P. is a soft blue cheese made with whole cow’s milk subjected to pasteurization from farms located in the provinces of the territory of the Consortium for the protection of gorgonzola cheese.
Taste: the “Natural” type has a decidedly spicy flavor.
Color: White or straw-colored paste, mottled due to the development of molds with blue / greenish veins. Gray and / or pink rind NOT EDIBLE.
Consistency: to the touch it is “solid” and creamy, with a solid texture without holes.
On the palate it is soft and amalgamated, with easy melting in the mouth.
