Intense aroma as the seasoning proceeds; mildly spicy flavor and mouthfeel; crumbly structure and texture.
Cylindrical shape, smooth and firm rind, color from light to dark brown; appearance of the paste: straw yellow colour, sparse holes, regular and grainy structure. Inedible crust.
INGREDIENTS: Goat’s milk, calf’s rennet, salt, lactic ferments.
