Sauvignon Doc Lahn St. Michael Eppan – White wine
Sauvignon “The Wine Collection” represents the most famous white grape of Cantina San Michele Appiano and Hans Terzer. From the limited production, the grapes selected and harvested by hand follow a special winemaking method.
APPEARANCE: Straw yellow color with green reflections
NOSE: Exotic fruit, aromas of gooseberry, banana, elderberry and white peach
ON THE PALATE: Vibrant acidity, very mineral, intense and elegant
COMPOSITION: Sauvignon
VINEYARDS
Location: the grapes come exclusively from selected plots of the Appiano Monte area
Soils: gravelly with calcareous content
Training system: guyot
VINEYARD AGE: 25 to 35 years
HARVEST: mid-September
VINIFICATION: 3 days of cold maceration (Skin contact) and soft pressing. Fermentation and aging in barrique / tonneau. After the first year, further passage on the lees for a total of 18 months in a steel vat.
YIELD: 40 hl / ha
